Long Handle Bread Lame

I have just started making sour-dough bread again after a 15yr break. 15 years ago there wasn’t so much information on the internet and I was making sour-dough from wild caught culture and and techniques based on guess work. It didn’t result in very good bread and I gave up!
I started again after find guidance and encouragement from You Knead and now we are enjoying wonderful sour dough bread as good as anything bought at an artisan bakery! Yahhhhh!

I’ve bought the starter kit and am very happy with all of it . However what makes it an absolute gem is the sourdough starter. From the start I followed the instructions and within two weeks I was making beautiful bread. I got too enthusiastic and made bread before the 2 magic weeks was up, which was not good but when I tamed myself and the sourdough it became magic. I now have a queue of friends for whom I am making bread. A couple of times I have forgotten to feed the sourdough or left it out and I’ve just calmly gone about taking off sufficient to make a new starter. It comes back stronger every time now I’m making 5 to 6 loaves a week of beautiful sourdough bread after only a few months of baking.
